.....it's nice to have a treat. Today I took the day off and decided to try something I haven't made before...Peanut Butter Biscuits (that's cookies for you Americans lol)
They turned out beautifully as you can see, but OMG, talk about not wanting to eat them too often, they are loaded with sugar, salt and heaps of butter!
Given we rarely have cakes or biscuits in this house, perhaps 3-4 times a year, I felt it would be a nice treat, and a fun to do with my holidaying son. Of course this ex-nurse cannot abide dirty hands so son had the job of rolling the dough into balls, I did the easy part of pushing the fork onto them LOL!
Here's the recipe for those that might like a little something sinful in their lives:
2.5 cups of flour
1.5 teaspoons of baking soda
1 cup of buttter or margarine
1 cup of peanut butter
1 cup granulated sugar
1 cup of packed brown sugar
2 eggs
2 teaspoons of vanilla essence
pinch of salt
Sift the flour, baking soda and salt together
In a seperate mixing bowl beat butter for 30 seconds
Add peanut butter and sugars, beating until fluffy
Add egg and vanilla, beating thoroughly
Add dry ingredients, shape dough into 1 inch balls and roll in granulated sugar if desired
Place on greased cookie sheet/tray, press with a ffork and bake at 375 degrees for about 7-10 minutes
(The shorter the cooking time the chewier they are apparently)
Cool on a wire rack
ENJOY!

OMG that is just spooky! I hate getting my hands 'food goopy' too! Mud doesn't faze me but food, blergh!
At Xmas I get the tots to roll the dough for the almond joy cookies LOL!

My oldest brother (now deceased) could make the best peanut butter cookies and everytime I see some I think of him. It's funny that you all press the fork into them too! I thought that was just a Southern thing. Ha!
aww, make some and toast him with one :)
About all I can do southern is a bad imitation of the drawl we Aussies hear in your speech LOL

I think I have the DVD somewhere. I saw the chick who wrote it on Oprah ages ago and what she said just made common sense to me that I never ended up watching it (coz I know it all).
I have always pretty much gotten what I want.
I have to start asking lotto for the big bucks though, coz everytime I ask to win lotto, I win (like fortnightly) but its only ever $27!
I am going to make these for my boys tomorrow ... one question though ... is it plain flour or self raising?

Hi Cath, the flour is plain, the baking soda (bicarb) is what makes them rise.
I also didnt add the pinch of salt as peanut butter has plenty in it, they really are delicious!

Been eyeing this recipe off for a few days now and just succumbed. Except I made it with cashew nut paste and gluten free flour. they still worked and taste delicious. Can I send you the bill for my new wardrobe of bigger clothes? LOL! xx
